This Month’s Recipe
Roasted Pasture Farm Chicken in white
wine with vegetables
Ingredients
Pastures Farm chicken
Red pepper, green pepper, red onion Leek, celery, fennel, potatoes
White wine, white wine vinegar, soy sauce
Put the unwashed chicken in a roasting dish and roast at 180oC (latest government health advice is not to wash your chicken as it can spread the bacteria across your kitchen). Remove from the oven 40 minutes before the end of the cooking time - which will depend on the size of your chicken.
Meanwhile, par-boil your potatoes.
Then add all the vegetables and potatoes to the pan, add a splash of white wine, white wine vinegar and soy sauce. The proportions of these depend on your taste and are neither recorded or the same twice in our house. Sorry, you’ll have to experiment!
Roast together in the pan with the chicken and its juices for the last 40 minutes. Delicious.
