Mallorcan bread with tomato, garlic and olive
A traditional and oh-so-simple Mallorcan dish , served for breakfast, lunch or d inner . It is just bread with a thin coating of tomato sauce, but it tastes much more special than the sum of its parts.
Amazing Grains sour dough bread is made at Emberton . It is availabe in The Bell and Bear at 6.30pm on Friday nights and The Swan in Olney at 6pm Tuesday and Thursday.
Ingredients
Two thick slices of Amazing Grains sour dough loaf
A clove of garlic , peeled and halved
Dash of olive oil
1 tbsp of passata (or for the purist, use some very juicy , fresh tomatoes) Sprinkle of salt
Very lightly toast the sour dough .
First, rub the halved garlic clove on the bread. Then, just lightly spread the passata (or the halved tomato) across the bread, squeezing a little to get the pulp and seeds on the bread . Repeat with the salt, and, lastly, the olive oil. You can experiment with quantities and ingredients . For breakfast , just leave out the garlic .
Apparently , the traditional way to mix the flavours together is to press the heel of the baguette to gently against all ingredients together on the bread . But, we found a knife just as useful!
