As we all reluctantly come back from the holidays and return to school and work, we thought it might be time for some lunchbox inspiration. Pack a lunch for you or your kids to look forward to with these healthy and delicious midday meals. Thinking of something to make for tomorrow’s lunch can be a real chore and many of us end up having the same thing over and over. Take inspiration from these lunchbox suggestions and feel free to adapt them to make your own favourite lunchtime snacks.
Monday – Tuna, green pea and parmesan cheese pasta salad, cherry tomatoes, mixed seeds and nuts, banana and bottle of water.
Pasta salad is a quick and easy to make crowd pleaser. Add your favourite ingredients to create a healthy and lling main that will leave you or your kids energised for the afternoon ahead. Combine with a couple of nutritious snacks, a piece of fruit and a bottle of water to start your week off right. This lunchbox contains three of your ve a day.
Tuesday – Smoked salmon, avocado and cheese roll, mixed dried fruit and nuts, apple, cereal bar and orange juice.
Try a twist on the classic lunchbox main, the sandwich. An unusual lling like salmon and avocado can help to make a lunch more interesting and also provides lots of nutrients to fuel your brain. Packets of dried fruit and nuts are also available at most supermarkets and are a convenient snack to add to a healthy lunch. This lunchbox contains four of your ve a day.
Wednesday – Tomato soup, carrot sticks, hummus, Ryvita crackers, pear and apple juice.
A ask of soup is great for breaking up the monotony of cold lunches – just make sure to x the lid on properly, or you could have an unfortunate explosion in your bag! Also, including hummus with a few different snacks to dip into it is another way to get more variety into your meal. This lunchbox contains three of your ve a day.
Thursday – Quorn pieces, grated carrot, rocket, avocado and chickpea salad, dried apricots, orange, bottle of water.
The avocado is back, and this time it’s in a salad. Add your favourite veggies and dressing to create a light lunch to look forward to. Quorn or other meat substitutes are a healthy alternative source of protein, making this salad not only lling and tasty, but nutritious too. This lunchbox contains four of your ve a day.
Friday – Salami, red onion & rocket wrap, cashew nuts, strawberries, and yoghurt drink.
Celebrate the start of the weekend with a treat in your lunch like strawberries, a apjack or a yoghurt dessert. Wraps are also great for stuf ng as many different llings into a sandwich as you want. Add some more healthy protein to your meal with some unsalted cashews. This lunchbox contains three of your ve a day.
